Our pits are 100% wood fired with oak, a slower burning wood than the mesquite used by others. Along with time and oak, we cook with a dry spice that ensures each plate of Rudy´s Bar-B-Q is perfectly ready for you.

Rudy’s brings the flavor of Texas Hill Country Bar-B-Q to the Brazos Valley at their location on Harvey Road. “Real People Eat Meat” is the motto at Rudy’s. Rudy’s is a meat market that sells cooked meats for dine-in or take-out, such as brisket, turkey, pork loin, chicken and sausage. All of their meats are rubbed with a dry spice and cooked on rotisserie pits with slow burning oak to give it that authentic Hill Country taste. Your meat is served up on butcher paper with Rudy’s famous “sauce” on the side (or you can have “sissy style” that has a little less of a kick).
