Bacon-Wrapped Scallops

Ingredients

2 tablespoons sherry or pineapple juice

½ teaspoon granulated sugar

16 large sea scallops

½ teaspoon salt

8 water chestnuts, cut in half

4 green onion stems, cut into

1-inch pieces

8 slices bacon, cut in half

Preparation Instructions

Combine sherry and granulated sugar in a medium bowl and mix well. Add the scallops. Let stand for 30 minutes.Preheat the broiler to 500 degrees.Remove scallops from the marinade with a slotted spoon. Sprinkle scallops with the salt.Place a scallop, water chestnut half and green onion piece on each slice of bacon.Fold bacon to enclose filling. Secure with toothpick. Arrange on grill. Cook until bacon is browned and scallops are opaque, about 10-12 minutes. Serve immediately.
